Meal prep went down in the WSS household last night and here’s what’s on the menu for the next few days.

Instant pot chili - my favorite for using up odd vegetables and easy prep. Plus, it means I can freeze half for later meals
Shredded chicken - a staple for my 15 minute meals. I’ve been using it for Buffalo chicken tacos, spring rolls and Chinese chicken salad
Bacon collards - super easy and a great way to sneak in some greens
Bruschetta chicken - will be on the blog soon!
Mini stuffed pepper - the easiest recipe that I’ll be making on repeat because it ticks all the boxes for me (fat, fiber, protein)
Ps. I used to hate meal prep which is why I much prefer food prep aka chopping up veggies and having 1-2 cooked meats in the fridge. It makes it easier for me to keep a varied diet while also letting my creativity roam
