Bananas Foster French Toast is the brunch obsession I never knew I needed in my life. Why I’ve been sleeping on french toast, I have no idea. But now that we’ve been reunited, it’s a love affair for the ages. So let’s talk about how to make your new paleo friendly brunch option so we can be obsessed together (but at least 6 ft. apart because ya know, rules).

As per usual, I’ve created this recipe as a single serving. However, it could easily be adapted for more people. It could also be made with regular bread if you’re able to tolerate gluten. Personally, I love using my favorites from base culture. Finding a good paleo bread can be challenging because they don’t always absorb the egg in the same way. But I’ve had great luck with them! 

To make sure that everything times out well and that I’m minimizing on the amount of dishes I have to do, I always start with the french toast before adding the bananas into the mix. I’ve also opted for the alcohol free version of bananas foster for today’s brunch. But I’ll happily take a mimosa or a latte please!

Bananas Foster French Toast INGREDIENTS

paleo bread

eggs (preferably pasture raised)

cinnamon

vanilla extract

unsweetened vanilla almond milk

coconut oil

sugar free maple syrup

vegan butter

banana

coconut sugar

MAKE Ahead
If you decide to batch cook these, I’d recommend storing the pre-cooked one in a warm oven on low heat. Additionally, you could always try toasting them if needed.

Paleo Bananas Foster French Toast

My favorite Sunday brunch recipe that combines one of my favorite breakfasts with one of my favorite recipes. Plus, it's gluten free, dairy free & refined sugar free!

Ingredients

  • 2 slices paleo bread
  • 2 medium eggs
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp unsweetened vanilla almond milk
  • 1/2 tbsp coconut oil
  • 2 tbsp sugar free maple syrup optional
  • 1 tbsp vegan butter optional

Caramelized Bananas

  • 1 banana, sliced into 1 inch chunks
  • 2 tbsp coconut sugar
  • 1/2 tbsp coconut oil

Instructions

French Toast

  1. In a shallow dish, mix together eggs, cinnamon, vanilla extract and almond milk

  2. Add both slices of bread in to soak & absorb the egg mixture.*

  3. Heat up a medium fry pan on medium heat

  4. Add your 1/2 tbsp of coconut oil and then your soaked bread. 

  5. Cook for 2-3 minutes per side until the egg is cooked and lightly brown. 

  6. Remove your cooked French toast and set aside.

  7. If you're using vegan butter, add now to let it melt from the residual heat.

Caramelized Bananas

  1. On a small plate, place your banana slices and sprinkle with a bit of coconut sugar. Save the remaining sugar to add to the bananas in the pan.

  2. Add coconut oil to your medium pan on medium heat.**

  3. Next add in your banana slices. Cook for 15 seconds and then add in a bit more coconut sugar. 

  4. Cook for another 15 seconds until the sugar has lightly caramelized. 

  5. Remove from heat and pour over your French toast. 

  6. Top with maple syrup if using. Enjoy!

Recipe Notes

*Depending on the bread you use, it might need a little longer to absorb the mix. I soaked mine for 2-3 minutes per side.
