There’s just something so comforting about a chocolate chip cookie. It’s a classic staple that you could like without but why would you want to? Thankfully, with all these spare time on my hands, I finally seem to have mastered the art making paleo chocolate chip cookies. Gluten free, dairy free, refined sugar free and so easy to make. We’re keeping it basic today with this recipe. So get ready for a baking party. It’s cookie time!
As always, I have a few notes for you with this recipe. I’ve given you the classic mix the wet ingredients and then the dry instructions. But if you toss it all into a bowl and pray for the best, it will be just fine. I use chocolate chunks from Hu Kitchen, my favorites, for my paleo chocolate chip cookies. And because I forgot to smash them down before hand, I got a bit of extra chocolate decor on the top of my cookie. So if you don’t have the glaze looking bit, it’s not you it’s me.ย
You could also switch up your paleo chocolate chip cookies by adding some walnuts or other nuts into the recipe. Or you could even get extra fancy and chop up a chocolate bar instead of using the chips. The possibilities are endless when it comes to cookies.ย
If you’ve looking to make a batch of these to go with your current Netflix or Hulu binge (I have two lists for suggestions on what to watch), then you might want to double the recipe. Or triple it. You’ll get about 5 large cookies. And sharing is not caring when it comes to cookies in our house. They also never seem to make it past a day.

Paleo Chocolate Chip Cookies
The gluten, dairy and refined sugar free chocolate chip cookies you've been missing in your life!
Ingredients
- 1 egg
- 2 tbsp maple syrup
- 2 tbsp coconut oil melted
- 1/2 tsp vanilla extract
- 1 cup almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3 tbsp chocolate chunks/chips
Instructions

Preheat oven to 350F and prep your baking sheet with either parchment paper or a silpat*

In a medium bowl, mix together your egg, maple syrup, coconut oil and vanilla.

Add almond flour, baking powder and salt to your wet mix.

Fold in chocolate chips/chunks.

Use a cookie scoop or 1/4 a cup to scoop out cookies and them place on your baking sheet. Then use the back of the 1/4 cup or a spoon to flatten them down. These cookies wonโt spread.

Bake for 10-15 minutes until they are a light golden color.

Remove from the oven. Convince yourself you can let them cool for 30 minutes or risk it and eat them then. Bakers choice! Happy eating friends.
