My favorite recipes are always the accidental discoveries. You know the ones where you just throw things together and bam! Magic! Today’s chocolate chip protein cookie is one of those moments and it’s a game changer for my sweet craving friends. Btw be sure to read the notes this one because you might need to make some adjustments depending on the protein powder you use.

If you’ve made my paleo chocolate chip cookies, this recipe will look familiar. It’s also got the added sweetness from the protein powder. You could absolutely make this more plant-based friendly by swapping in your fave protein. However, you might find you need a bit of almond milk to get everything to mix just right.

I would also highly recommend using a large cookie scoop as it makes everything a bit easier. I get exactly 9 cookies every time using my large scoop which is perfect for the impatient baker like me who loves to knock everything out in one go.Ā

Here’s what you’ll need to make your soon to be newest obsession:

almond butter

eggs

vanila extract

maple syrup

coconut oil (for the donuts & for greasing the pan)

almond flour (make sure it’s flour & not meal)

baking powder

salt

vanilla extract

chocolate chips (I use Hu Kitchen to keep it paleo)

HOW TO STORE & REHEAT

The chocolate chip protein cookies will keep in the fridge for a few days. But if you’re not going to eat them all at once, I’d recommend freezing them in aĀ stasher bagĀ for later. These are best reheated in the toaster oven for 3-5 minutes or for 20 seconds in the microwave.

The Best Chocolate Chip Protein Cookies

Ingredients

  • 2 eggs
  • 2 tbsp coconut oil
  • 2 tbsp almond butter
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1.5 cups almond flour
  • 1/2 cup

    vanilla protein powder
  • 2 tsp grain free baking powder
  • 1/2 tsp salt
  • 1/2 cup paleo chocolate chips

Instructions

  1. Pre-heat your oven to 350F and line a baking sheet with either parchment paper or a silpat.

  2. In a large bowl, whisk together the eggs, maple syrup and vanilla extract.

  3. In a small bowl, add your coconut oil & almond butter. Place in the microwave for 30 secs to melt. Remove your bowl and whisk your coconut oil & almond butter until smooth.

  4. Add your almond butter mix to your eggs. Whisk to combine.

  5. To your egg mixture add your almond flour, protein powder, salt and baking powder. Fold together to combine making sure everything is evenly distrubted. Don't be surprised if this takes a second.*

  6. Now fold in your chocolate chips.

  7. Using a large cookie scoop, scoop your mixture and place each cookie about 1 inch apart on your baking sheet. You should get around 9 cookies.

  8. Using the back of the spatula, flatten each cookie out to about half the height of the ball. The cookies won't spread but will puff up a little bit so make sure they aren't touching.

  9. Bake your cookies for 13-15 minutes removing once golden brown. Be mindful not to leave them in too long if they aren't quite as brown as you'd like otherwise the chocolate will burn.

  10. Let them cool for 10 minutes and enjoy!

Recipe Notes

*Depending on the protein powder you're using, you may need extra moisture. Add in a bit of almond milk 1 tsp at a time if needed.
