I am a cold brew lover. There’s just something about getting a well made cold brew that brings me joy. It’s also a bit nicer on my sensitive stomach so I will forever appreciate that. But sadly, I went dairy free before Starbucks launched their fairly popular vanilla cold brew. However, instead of being sad that I couldn’t try the drink so many of my friends are obsessed with, I thought I’d create one that us paleo/keto/vegan kids could love. Savvy’s vanilla cold brew recipe to the rescue!
I’ve included several notes/alternate versions in todays recipe because making cold brew itself takes time. You can easily get around it by buying a pre-made version or using leftover coffee. I find I’m never consistent enough with my coffee choices so it’s easiest just to use what we have left in our chemex the next day. Less waste and it gets me coffee quickly.
However, the one thing you can’t really work around is giving your coconut milk time to separate. If you’re like me and you never think of it until the last minute when you want an easy coconut cool whip or to make your own vanilla cold brew recipe, I’d recommend just leaving a can of coconut milk in the fridge all the time.
Additionally, the key to this recipe being keto is the syrup. If you’ve seen my other latte recipes (matcha, vanilla, mocha or chai), then you’ll know I’m obsessed with NuNaturals. Their keto, paleo and vegan friendly syrups are my go to for drinks. If you’re not so concerned about sugar, then you could always sub in maple syrup. Personally, I love that with the keto syrup, I don’t have to worry about the energy crash from my coffee later in the day.

Vanilla Cold Brew Recipe (Vegan, Paleo & Keto Friendly)
A healthier version of your favorite Starbucks recipe!
Ingredients
Vanilla Cream
- 1 can coconut milk refrigerated overnight
- 2 tbsp vanilla syrup *see note
- 1 tsp vanilla powder or extract
Cold Brew With Vanilla Cream
- 1-2 cups cold brew coffee **see note
- 2 tbsp vanilla cream
- 1/2 cup ice

How To Make Your Own Vanilla Cream

First, we're going to remove the cream from your coconut milk can. The easiest way to do this is to take your chill coconut milk can and open it from the bottom. Pour off the liquid aka coconut water and save it for later use in a smoothie. Now all you have left is the coconut cream.

Add your cream to a mixer with the whisk attachment and whisk on medium for 60 seconds. You could also do this by hand if needed it just might be a bit harder.

Scrap down the sides of your bowl and then add in your syrup and vanilla.

Whisk again for 30 seconds.

Remove from bowl and add to a container that can be stored in the fridge. Tada! You now have vanilla cream.
Vanilla Cold Brew Recipe

Add ice and coffee to your favorite cup.

Top with 2 tbsp of vanilla cream and stir!

Add a straw and enjoy your tasty, paleo/keto/vegan coffee treat!
Recipe Notes
*To keep this recipe keto friendly, I use NuNatural's vanilla syrup. You could sub this for maple syrup or powdered sugar if you aren't keto.
**There are a TON of ways to make cold brew coffee. If you want the traditional version, it's 1 cup of ground coffee and 4 cups of water steeped for 12 hours. Then you simply filter out the grounds. The easiest way is to use a traditional coffee filter. And viola! You have cold brew. However, I like the lazy girl method and use leftover coffee or store bought. If you use concentrate, you might need more cream or some water to dilute it.
