A versatile pasta dish that let's you use up the bits in the fridge. Made in under 15 minutes, it's a creamy & delicious meal that will become a staple.

Servings: 1 bowl
  • 4 oz pasta Banza is my favorite at the moment
  • 2 tbsp hummus or other dressing/sauce
  • 2 tbsp nutritional yeast
  • 10 sun dried-tomatoes or 10 cherry tomatoes roasted & smashed
  • 1/3 cup spinach
  • Salt & Pepper
  1. Cook pasta according to directions in a small/medium pot.
  2. Drain pasta but save a little bit of the pasta water.
  3. Add pasta back into warm pot.
  4. Stir in hummus & yeast until melted and creamy.
  5. Add in spinach and stir until wilted.*
  6. Add tomatoes and stir until warmed.
  7. Season with salt & pepper to taste.
  8. Serve & Enjoy! I like to top mine with more nutritional yeast.

*you may have to turn the stove back on to get the spinach wilted if your pan doesn't hold heat well
